From Joy of Cooking and my own musings
1 cup cooked bulgur wheat
1 bunch of parsley, chopped fine
1/2 cup chopped cherry tomatoes
1/2 diced english cucumber
1/3 cup lemon juice
1/3 cup olive oil
salt & pepper to taste
Cook & cool bulgur according to directions on the box. Add to parsley, with remaining vegetables.
In a separate bowl, whisk the olive oil into the lemon juice. Pour over the vegetable & bulgur mix and stir to combine. Season as necessary. Add feta if you’d like, I found it was missing something until I added the feta.
