Half a batch of pizza dough
2 tablespoons cornmeal
¾ cup shredded mozzarella cheese
Grated pecorino romano & parmesean cheeses, as much or as little as you want
1 cup tomato sauce
any other toppings you’d like
Preheat oven to 450 degrees F. On the back/bottom of a baking sheet put a piece of parchment paper and sprinkle it with cornmeal
On a lightly floured surface, roll out the dough, stretch it out with your hands until it’s the shape/size you want, making sure it will fit on your baking sheet.
Put prepared dough on the baking sheet, the cornmeal with help it from sticking, and gives it a real pizza-joint feel.
Top with whatever you like, I used about a cup of the tomato sauce with onion & butter, and 3 cheeses
Drizzle a bit of olive oil over the top, and season with salt and pepper
Put pan in the oven for about 15 minutes, until cheese is melted and bubbly, and crust is golden
Top with fresh basil, Mangia!
