1 russet potato, (for two people, one large potato is more than enough)
Salt and pepper for seasoning
1 teaspoon (about) paprika
2 tablespoons olive oil
Preheat oven to 425 degrees F
Wash potato, and peel if skins aren’t your thing
Cut in half lengthwise, then each half, cut into3 large slices, then cut lengthwise again into strips.
Cook tossing occasionally for about 30 to 40 minutes or until crisp on the outside and cooked through.
