Adapted from the Quaker Oatmeal container (seriously).
1/2 cup plus 2 tablespoons butter, softened
3/4 cup firmly packed brown sugar
1/2 cup granulated sugae
1 teaspoon vanilla
1 1/2 cups all purpose flour
1 teaspoon baking soda
1/4 teaspoon ground cinnamon
1/2 teaspoon salt
3 cups of Quaker oats, uncooked
1/2 cup raisins
1/2 cup cinnamon chips
Heat oven to 350 degrees F. In a large bowl beat butter & sugars until creamy
Add eggs & vanilla, beat well
Add flour, baking soda, cinnamon & salt, mix well
Add oats, raisins & chips, mix well.
Drop by rounded tablespoonfuls onto ungreased cookie sheet, bake 8-10 minutes, cool on cookie sheet for a minute or two then transfer to wire racks.
Alternatively, you can make bar cookies instead and put the whole batch into a 13×9 ungreased baking pan and bake for 30-35 minutes. I made one cookie sheet of cookies, and put the rest into my 8×8 glass baking dish and they came out amazingly!!!!
