This is how I like my tomato sauce to taste, it’s got more to it than the onion & butter one and it reminds me of what my great-grandparents apartment used to always smell like. I don’t remember ever eating Nonno’s homemade tomato sauce, but the apartment always smelled like simmering sauce. Maybe it’s an Italian version of glade- “Eau de Tomate.” haha.
1 can diced tomatoes, or 1 large tomato diced, I had a can on hand so I just used that
1 sm can tomato sauce
1/4 chopped green pepper
1/4 chopped red pepper
1/2 chopped onion
1 large or 2 small garlic cloves chopped
Salt, pepper, and italian seasoning, or just oregano
Drizzle 1 tablespoon olive oil in large saute pan with high sides, I use my large 3 Qt skillet. Add peppers, onion & garlic and saute until onions and peppers are softened, about 5 minutes. Be sure to stir frequently so the garlic doesn’t burn.
Add diced tomatoes and tomato sauce, salt, pepper, and italian seasoning to taste, let mix come to a boil, then cover and simmer for 15mins. or until whatever else you are cooking is done. This will thicken the sauce do it depends on what you like. Adjust any of the seasonings to taste.
This sauce does have a bit of a heavy pepper flavor, but I think it rounds out the sauce a bit, and if you’re just putting it on some spaghetti, it’s a good way to sneak some extra veggies in.
