1/4 cup olive oil
juice from 1 small lemon
1 garlic clove, minced
1 tablespoon shallot, minced
salt & pepper to taste
1 tablespoon lemon zest
1 lb chicken breast– (you can use skinless chicken breast, filets, I had a package of small stir-fry pieces on hand and used those)
Preheat oven to 350 degrees F.
Whisk ingredients (except chicken) together in small bowl, I used my 2 cup pyrex measuring cup.
Place chicken in shallow baking dish and pour mixture over the top. MIx everything around, cover with plastic wrap and refrigerate for 20-30 minutes to let the flavors come together.
Bake for 25-35 minutes (depending on what kind of chicken you ended up using)
