I’ve had this recipe on the back burner for a long time. It’s in a couple of cookbooks I own and always pops up in a google search of “budget friendly” meals- or something along those lines. Last week I had some left over marinara, a piece of bread and some snacks, otherwise, the fridge was pretty bare. I didn’t want just pasta & sauce, so I dug up this old friend and decided to give it a shot. I will say, my egg-cracking skills are pretty amateur as you’ll see in the photo below, and all in all, it was a surprisingly filling meal and not too shabby.
Here’s how I did it:
Heat marinara sauce:
Once it comes to a simmer break eggs directly into sauce, cover and cook until whites are set.
In the meantime toast up some bread,
Top with eggs & sauce
It’s not going to win any beauty contests, but it was a good meal at the end of a long day.
Now. The photos that are in purgatory are sadly lost & gone forever. Which is so sad. They were pictures from a fantastic wedding this weekend, it was a great party and the food was outta this world. You’re just going to have to trust me on this one.
