Aka- It’s a Thursday night, I’m out of leftovers, and I refuse to go to Whole Foods for a third time this week.
The scene is set: sweatpants & Bean slippers, check! Sinatra, check! Red wine, check! Now, what’s for dinner?
I rummaged through the cabinet & fridge and thought how about this? Let’s not even discuss the fact that I spent a good portion of my day in the cubicle trying to come up with a recipe with the known contents of my cupboard and crisper drawer: ricotta, 1 frozen hot Italian sausage, 2 slices of prosciutto, half a sweet potato, ¼ head of cabbage, celery, plenty of canned diced tomatoes, white beans, tuna, and several grain options- whole wheat pasta, barley & bulgur. Not exactly a lot of options in there. Oh, I also have a tad bit of heavy cream.
This is what tends to happen when I grocery shop for recipes rather than consistently replenishing my staples. My grocery carrying capabilities are limited these days, I can only carry 5lbs in my left arm still. 2 more weeks and I’ll be back up & running at 100%. I cannot wait. Especially since I think the Docs need to dial back the settings on the ol’ ticker. I haven’t been able to drink coffee lately, my heart races for hours after and it’s just not cool. Well hey, at least it’s working, right?
Ok, so back to dinner. I was leaning towards something with the sweet potato- roasted- then on top of some grains? Maybe a dash of ricotta? We’ll see how this turns out…
