It was family dinner night at the apt. I wish my apt had a good nickname. My last place had catchy street name and that’s what we always referred to our home as. This one isn’t quite as catchy or fun, so I don’t really know how else to refer to it other than “the apt.” Well, I do refer to it generally as La Cucina, so I guess I’ll go with that. Let’s start over.
It was family dinner night in La Cucina. M (roomie) & I both really like to cook and the only time we really have to plan something and enjoy it lately is the weekends, a nice lil’ Sunday night treat. And of course, I’ve really been enjoying fall produce, flavors, activities, so it continued with a meal built around wanting to roast/bake acorn squash.
I figured a baked chicken or turkey dish would be a good match for the squash. I started perusing the inter-webs and M & I decided to have a small pre-Thanksgiving inspired dinner. I used a recipe from Martha Stewart- Chicken w/Cranberry sauce, to accompany the baked squash, which then led to stuffing & of course, brownies. So ok, the brownies aren’t really Thanksgiving themed, but the meal was soooo good. I neglected to fully read the recipe for the chicken before I went to the store, so I sort of winged it. Haha. Chicken, wing it, oh wow. I crack myself up sometimes.
As for the squash, I knew what I needed to do, but wasn’t sure about temperature and timing so I used this recipe. The only thing I did differently was cover the baking dish for about 20 mins in the middle of cooking to help expedite the process a touch.
This weekend I also got a chance to visit another farm stand (Connors in Danvers, MA) and walk through their Corn Maze with my Mom & Aunt Kathy. That’s where I bought the squash, and this lil’ buddy
