This weekend was a fabulous collection of friends, food & sun. But let’s get straight to business. The food.

The rest of the weekend was lazy and pretty uneventful. I spent some quality one on one time with each of 3 of my closest girlfriends and it was just nice to sit & gossip, get our nails done, laze around on the beach. Everyone gets so busy with life (especially the 2 planning weddings!) it’s easy for time to pass and not really get a chance to have a real conversation or just relax with one another. I was about due for some serious R&R and that’s what this weekend brought.
It was also a really hot weekend, and the heat doesn’t motivate me to do a whole lot of heavy cooking. (4th floor apt, no air conditioning, you know.) So I kept it simple and made a pizza. I used a store-bought pizza dough for the base, and topped it with whatever I had left in the frigde. I dressed it up with a bit of grape tomatoes, ricotta, arugula & prosciutto.
It’s best to cook the pizza with the cheese & other toppings, about 12- 13 minutes at 500 degrees F, then add the arugula & prosciutto once it’s out of the oven.
The crust was crisp & crunchy on the outside & soft on the inside, it was perfect! The ricotta was a nice addition as it was creamy & mellow, there was a bit of shredded mozzarella and grated pecorino romano for a salty kick. I used grape tomatoes sliced thin instead of mashing up cherry tomatoes, and they added a deeper flavor than cherry tomatoes would have.
