It’s ok, I’d never heard of it either. I was thinking last week, after going back through the archives of the past couple of months, and remembering all the way back to my first original post, that I seem to have strayed from my original intent.
I was supposed to be showcasing my strengths and my heritage (Italian.) It doesn’t take much more than a quick glance over the recipe list on What’s Cookin’ to realize, “Hmmm… chicken enchiladas…pot-stickers…black bean soup…something isn’t right here.” The past few months, I’ll be honest with you have been more experimental, I was trying to break out of my pasta/baked chicken/risotto rut. This past weekend I decided to give it the ol’ college try again but with a new dish: Chicken Valdostano.
I also recently enjoyed the Chicken Marsala at The Paramount and I would say this is a dressed up version of that. (Side note, this is also a bit strange, because until fairly recently you couldn’t get me to eat a mushroom if my life depended on it and I have had a mushroom focused meal 3 times this week!) It’s essentially a chicken cutlet with mushroom sauce, cheese & prosciutto on top. For some added nutritional points I roasted asparagus & cherry tomatoes. I also had a touch of whole wheat penne, because what’s an italian meal without pasta??
To further my foray into honoring my Italian side, I will most likely be watching the Italy game of the World Cup today. (And you should too. Italian Soccer Players. Need I say more?)
