I seriously cannot get enough of these things lately. Either in my scrambled eggs at brunch, in the form of guacamole, or on top of some chicken & rice, I cannot get enough of these lil’ green treasures.
Tonight I chopped an avocado up with some red onion, a dash of salt, spritz of fresh lime juice, corn, and put it on top of a spice-rubbed grilled chicken breast and brown rice. Simple, spicy, the avocado cooled off my mouth after the cayenne pepper kick of the chicken.
The spice rub was simple- dash of cayenne pepper, dash of garlic & onion salts, kosher salt, ground black pepper, and a touch of cumin. Just enough spice to give the chicken a hot kick and the cumin provided the bold depth of flavor. So good.
I’m getting pretty good at this…but you just have to take my word for it at this point, I need to find a new taste-tester, someone that can atest to and vouch for the awesome-ness.
