Let me tell you about Matt. One of my co-workers and the only person I know on the face of the planet who doesn’t eat sweets. Nothing. No cookies, cake, muffins, chocolate. No dessert, no breakfast treats. It’s unreal. And no, he’s not a self-proclaimed health nut who doesn’t eat meat or sugar or anything like that. The man loves a steak & cheese sub like nobody’s business. And bacon.
This comes up often in the office, as I noted earlier we talk about food. A lot. Someone’s always bringing something in and if it’s sweet Matt never tries it. We forced him to eat a plain M&M awhile back, straight from the horse’s mouth: “Gross!” I don’t take it personally that he never tries my banana bread, or my Christmas cookies, or brownies, (you get the picture) but my over-bearing motherly instinct in me will not give up- “C’mon, just try it, you’ll like it!” And persistence has paid off people, I think I’ve found something that might convince him to give dessert one more chance. Plus it’s his birthday, so what better occasion to give these a try?
Holy good lord I didn’t think these four words belonged in a sentence together, let alone a recipe: Peanut Butter Bacon Cookies. Yeah that’s right, bacon, in a cookie. If that’s wrong, I don’t want to be right.

I don’t know if I’ll make them again, it’s sweet at first and nice, then the bacon flavor lingers. And lingers. If you like bacon, go for it. But if you want a cookie, stick with these.
