Well hooray! This past weekend was Easter, and you know what that means… the official end to the Lent challenge. Besides my trip to London and few indiscretions last week it was overall a success. And the thing is, I don’t want it to end. I want to stick with the overall tenets and continue a wholesome and natural diet. Yipee!

To continue my quest for tasty home-cooked meal, tonight I attempted black bean burgers. They need some help staying together, but, still tasted pretty good.
Briefly- 1 can black beans, 1 small can corn, 1/2 chopped red pepper, 1/2 chopped green pepper, little bit of chopped onion, 1 chopped garlic clove, 1 tablespoon cumin, dash of chili pepper, 1 tablespoon salt, 1/2 cup whole wheat bread crumbs, 1 egg. Rinse & mush up black beans and mix everything together, form into 4 patties and grill. I topped mine with a quick homemade salsa- chopped tomato, onion, salt, pepper, and 1 garlic clove.
Oh. And I almost forget to tell you about this. Last week I needed chocolate. Word to the wise, if you attempt this, be sure you have a hand mixer or some sort of appliance to beat the egg whites. I got halfway in and realized, oh, right, my hand mixer moved with my roommate across town. Well. 15 minutes later with my handy whisk was good enough. The cake was not as fluffy as it should have been, but fantastic anyway.
