2 trips to the grocery store and one free Sunday afternoon later we are back on track in La Cucina folks! I made a commitment after my scrumptious brunch to try again and make something tasty for myself. I thought ahead and planned out a couple of dinners and lunch for the week (breakfast is all set).
So, I kept it simple, I recycled and added a few new things.
Lunch: Revisiting the rice & avocado creation from a couple weeks ago. This time though, I added black beans, green peppers & chicken to seasoned brown rice. Topped with some cheese & avocado, and there’s a full and tasty lunch!
Then came the fun part. I roasted some garlic… just for fun.
I later made some garlic bread…
Mix up some tuna with a bit of fresh lemon juice, parsley, salt & pepper
I mixed in the tomato sauce, and put it over some whole wheat spaghetti
