Oh man. So, the other night, this happened.
And then again tonight I was hungry and did not have anything ready! This is where things can get tricky. I stayed at work late to do my taxes, got in a quick workout and before I know it, I get home and it’s 9pm and I’m starving. There were several obstacles in my way and ingredients I felt I needed to use before they went bad.
1. I had taken chicken out of the freezer but it wasn’t completely defrosted, and I didn’t feel like making a big meal.
2. I had a nicely ripened avocado that was begging to be used, (note: I was not previously an avocado fan, but now I can’t get enough)
4. I couldn’t find my bag of white rice and we all know how well the brown rice went last week.
What to do??
I set that on the stove and got to chopping the rest.
Once the rice was cooked (hooray!), I mixed in ½ teaspoon of taco seasoning, the green & red peppers, a bit of red onion, then topped it off with a dash of shredded cheese and avocado. Ahh, success.
Oh! I almost forgot, I saw the funniest thing at the grocery store last week and I gotta give it a shout out- this guy, Rick’s Picks NYC. They’re a brand of pickled goods- pickles, green beans, beets, there’s a party pack! My personal favorite was the jar of “Phat Beets.” Get it? Ha. I got a chuckle out of it. Maybe it’s just ‘cause me & E (former roomie, current awesome friend with new puppy- yay!) used to hang out at our apt. and listen to what we called some phat beats. That’s right, or as her boyfriend (another B) would say, “You know what I’m talkin’ about, right?”
